I agree that Flexx is a wonderful theme. It's very user friendly and allows you to do so much. I do wish that changing the navigation bar color and the home image was a little easier. I haven't tried Thesis yet, but Headway is also one of my favorites. Another option is Artisteer which allows you to create a custom theme and is quite simple to use. I do use Open Hook and it is much easier. Still not completely user friendly for non-tech folks, though. There are a lot of things typical users can change, but still plenty that are more techy.
